One of my favourite memories as a Mom is my kids bringing me breakfast in bed, then jumping in with me and begging for mouthfuls of the food they had prepared (with their dad's help of course), like so many baby birds with wide open mouths.
Breakfast is a meal with SO many options, not all of them healthy. In my home, we stopped buying expensive packaged cereal many years ago and instead eat from a selection of eggs, avocado, yogourt, cottage cheese, fruit and homemade granola.
If you ever thought that granola was difficult to make, you need this recipe! Shared by my friend Sherry, this recipe is now on continuous repeat in my home. Amp up the flavour with a few drops of dōTERRA Cinnamon Bark or On Guard essential oil.
I love to have a bit of granola with some Greek yogourt for breakfast, but you can also sprinkle it on ice cream or use it in parfait desserts.
The recipe is very flexible and forgiving. You can swap any of the mix-ins, or add other mix-ins as you prefer. If you don't like coconut, use almond flakes, pecans or walnuts. If you're allergic to nuts, mix in sunflower seeds instead. It can be different every time you make it. The recipe can also be scaled down and even baked in an air fryer.
I store my finished granola in mason jars, but any large sealed container will work.
